For the pear-vanilla jam, peel the pears very thinly, core them and cut them into small cubes. Grate the zest of the lemon, squeeze the lemon. Mix the juice and zest and roll the pear cubes in it.

Cut the vanilla beans in half lengthwise. Bring the apple juice with the vanilla beans to a boil in a large saucepan and reduce by half.

Then add the pears with the lemon juice and boil again for 15 minutes while stirring, immediately fill into clean jars and close tightly.
