Instructions:

Mix the pancake ingredients into a batter. Melt a little fat in a non-stick frying pan, bake the batter in 2 portions, keep warm.

Cut the peeled pears in half, remove the core. Boil vanilla pod, water, sugar and rum. Put the pears in and cook for 15 minutes.

Remove pears and drain. Remove vanilla pod.

For the sauce, crush the apricots and mix them with cornstarch and rum in the cooking stock of the pears. Boil the sauce with a little water.

In an ovenproof dish, place the pancakes on one side. Place the second pancake on top and heat everything together in the oven at 200 °C for 10 minutes.

Pour the apricot sauce on top and serve the pancakes cut into portions.
