Pasta dishes are just always delicious!

Finely chop the ginger, garlic, shallots and chili pepper. In a saucepan, heat vegetable oil and sauté chopped spices over medium heat. Add minced meat and sauté. Pour chicken soup, cut lemongrass stalks in half lengthwise and add, let it bubble up, remove soup from heat and let it steep for 10 min with the lid closed. Remove lemongrass, season soup with fish sauce, lime juice, salt and perhaps sugar.

Blanch water spinach and bean pods and add to soup.

Bring soup to a boil, add rice noodles and cook in it.

Arrange soup evenly in deep bowls and sprinkle with fresh Thai mint, as well as cilantro and basil leaves, if desired.
