If you want to prepare this dish in the office, prepare at home: To make the pasta salad with shrimp, cook the pasta in salted water until al dente, rinse with ice cold water and strain. Pour into a fresh-keeping tin and refrigerate. For the dressing, mix well the sherry vinegar with nut oil, Dijon mustard, shallot, parsley, salt, pepper and a pinch of sugar. Pour into a sealable jar and store in a cool place. Cut the cleaned carrot into fine strips. Mix the cooked pasta with the shrimp and carrot strips. Marinate with the prepared dressing and arrange on a few 40 chicory leaves.
