Pasta Casserole with Chard

For the pasta casserole, put cashews in a bowl and pour the water over them. Let soak for at least 2 hours. Preheat oven to 200°C top and bottom heat.

Cook pasta about 2 minutes shorter than indicated on package directions. Cut onions and chard into strips. Sauté onions in hot olive oil until translucent, add chard and saute until collapsed.

Mix the chard with the pasta and pour into a baking dish. Finely puree cashews with the soaking water, salt, pepper, nutmeg and garlic in a stand mixer, or with a blender, pour over the chard and pasta mixture and bake for about45 minutes until the top is lightly browned.

Brown pine nuts in dry skillet and sprinkle over finished casserole.
