Try this delicious pasta dish:

A sugo only of melanzane to pasta. To make it, cut 1 Kg. Melanzane lengthwise and then cut diagonally into finger-thick strips. Put them in salted water for 20 minutes. Remove and squeeze well. Heat olive oil in a saucepan, sauté a spoonful of chopped garlic and parsley. Add the melanzane, stir and pour 0, 1 L of chicken soup on top. Cover and simmer at low temperature for five minutes. Add a little more clear soup and season with a pinch of salt, pepper and a dried chili pepper. After 15 min. the sauce is ready. Fold in fresh parsley and bring to the table mixed with the pasta.

Sauté the garlic, onions, chili and basil and prepare a tomato sauce with the tomatoes and the clear soup. Cut the melanzane into slices, season with salt and roast in olive oil on both sides.

Put them on the spaghetti with tomato sauce. Garnish with basil.

Tip: You can do without salting and watering just as well,
