For the Parmesan ice cream, mix the grated Parmesan cheese with the whipped cream in a baking bowl. Warm the mixture in a bain-marie for about 8-10 minutes until creamy, stirring constantly with a whisk.

Filter the liquid through a hair sieve, add the pepper and leave to cool. Put into the ice cream maker as for normal ice cream.

Preparation without ice cream maker: put the cream in the freezer and let it freeze, in between take it out again and again and stir it, so that no coarse ice crystals form.

Arrange a scoop of Parmesan ice cream on each dessert plate and drizzle with a little balsamic vinegar. Garnish with some pear slices and toasted bread.
