Cut trout fillets with skin into small cubes. Finely dice shallots and fry in hot butter until golden brown. Fry the trout fillets on top.

Add whipping cream, white wine, juice of one lemon and Vermouth and let everything brew together. In a food processor or with a blender make the mixture into puree and pass it through a fine sieve.

Squeeze out the gelatin soaked in cold tap water and warm it with the sherry until it has dissolved around it. Add to the trout puree, season with salt and pepper. You put the quantity cooled down in the process. Shortly before it sticks, you should mix it again.

Later add the whipped cream.

Spread a baking dish with the salmon slices. Pour the trout parfait into it. Fold the overhanging salmon slices over the quantity.

Let cool in the icebox for about 5 h.

Tip: Lemons add a fresh touch to dishes. Consciously choose ripe, rich yellow lemons!
