Slit open the vanilla pod and scrape out the pulp. Stir pods and pulp with whipped cream and sugar in a saucepan. Bring to the boil, gently bubble for 15-20 min. In the meantime, soak the gelatine in cold water. Remove the vanilla pod from the whipped cream. Squeeze the gelatine and let it melt in the hot whipped cream. Pour into a suitable bowl or 2 small ramekins and leave to set in the refrigerator for at least 3 hours or overnight.

To serve, shape the cream into dumplings with 2 spoons or turn out of the ramekins. Arrange on dessert plates. Garnish with mint leaves and dust lightly with powdered sugar.

1/2 c flour

1 cn hominy, (300 g) pureed 100 g breakfast bacon, -diced and fried 2 tablespoons Parmesan, freshly grated Chives, chopped

-Omelets, pancakes and fritters

Sift flour and baking powder and mix with salt and pepper in a baking bowl. Add eggs and milk and stir until smooth. Fold in pureed bacon, cheese, hominy and chives. Cover with plastic wrap and let rest for 20 minutes. Grease and heat a coated frying pan. Pour in 2-3 tbsp. batter at a time and cook over medium heat until golden brown on both sides, about 2 min. Transfer to a plate
