Pancakes Filled with Halibut and Lemongrass

Instructions:

For the pancakes, chop the chives and mix together with eggs, flour, salt, water and a little oil to form a batter. Heat a little oil in a coated pan (about 30 cm in diameter) and pour in about a ladleful of batter. Swirl the pan to distribute the batter. Bake pancake until golden brown on both sides. Lift out and let cool. Bake remaining pancakes in the same way. Season the halibut fillets with salt and pepper, slice the lemongrass thinly. Now put some fish fillet on each pancake first, put the thinly sliced lemongrass sticks on top and roll up the pancake. Tie with chives. Place the pancakes in a steamer (bamboo basket or a pot with an insert) and cook for about 7 minutes. Lift out and serve with the soy chili sauce that has been prepared in the meantime. For the soy chili sauce, mix well the soy sauce with water, sesame oil, finely chopped chili, chives and garlic.
