Pasta dishes are always a good idea!

The day before, cut the apricots in half and soak in the wine. Mix the milk with 1 pinch each of salt and sugar and the flour and swell for 20 minutes. Add the eggs. Bake 8 narrow pancakes in 1 tbsp. hot oil on each side for 2 to 3 minutes on 2 or automatic cooking zone 8 to 9, then stack them between parchment paper.

Drain the soaked apricots and collect the wine. Mix the curd cheese with crème fraîche, 100 g sugar, 1 pinch of salt, scraped vanilla pulp and egg yolks. Spread 2 tablespoons of curd cheese and a few apricots evenly on each pancake, fold the pancakes into quarters and place them in the greased baking dish. Stir the remaining curd cheese with the whipped cream and pour over the pancakes.

Bake in the oven.

Circuit: 200 to 220 degrees , 2nd slide bar v. U.

170 to 190 °C , convection oven 25 to half an hour.

In the meantime, rinse and clean the strawberries, perhaps halve the larger fruits and steep them in the apricot wine. Serve on plates with the pancakes and sprinkle with the remaining sugar.
