Instructions:

For the pancake cordon bleu, first make the pancake batter. To do this, mix the milk with the eggs and a large pinch of salt until nice and fluffy. Then stir in the mixed spelt flour. Let the dough rest.

In the meantime, cut the ingredients for the filling. Now heat up a pancake pan. Mix a dash of mineral water into the dough. Fry the pancakes one by one in the pan, adding a little butter or coconut oil, and place them on a plate.

Top the pancakes with cheese, ham and onion and twist them into rolls, or fold them like wraps. Fold in the side edges or fix them with toothpicks, if necessary, so that the cheese does not run out during baking. Dredge the pancakes in spelt flour, beaten egg with milk and breadcrumbs.

Heat plenty of oil or lard in a large frying pan and fry the pancakes until golden brown. Also paper towel to drain excess oil and serve the pancake cordon bleus hot.
