Instructions:

For the Paleo Cheesecake first prepare the dough. For this, mix all ingredients into a dough and chill well for about 30 minutes. Roll out the dough between 2 layers of baking paper and place in a baking dish.

For the cream, soak cashews in water one day before preparing. Preheat the oven to 200 degrees. Pour away the soaking water and blend the cashews in a food processor until you get a fine crumbly consistency.

Scrape the pulp from the vanilla pod and add to the ground cashews along with the coconut milk, eggs, lemon zest and maple syrup. Blend everything until you get a creamy mixture.

Add the coconut flour and mix again. Spread the cream over the top of the batter. Bake the Paleo Cheesecake for 30 minutes at 170 degrees top and bottom heat.
