For the hay cake for the cook first prepare the cake base. For this, beat egg whites with sugar until very stiff. Fold in yolks, flour and chocolate and spread the dough on two greased trays. Bake at 175°C and let cool.

Drizzle the base with rum. Whip the cream until stiff and set aside one third. Mix the remaining 2/3 with cocoa.

Fill the cake with jam and chocolate whipped cream. Cut the cake like a chef’s jacket, spread with whipped cream.

Decorate the cook’s hay cake with melted chocolate and chill before serving.
