Dice the meat, discarding the tendons. Gradually pass through the fine slice of the meat grinder. Remove the peel from the onions and garlic cloves, chop finely and add to the meat mixture. Season with salt and pepper, knead the whole thing neatly together. Pour into prepared jars and brew at 100 degrees Celsius for 2 h.
