Instructions:

Clean the leek and cut it into thin strips, just like the ham. Sauté both in fat, add mushrooms, chopped peppers and cornichons, season with cream, salt, bell pepper fraiche and parsley. Beat salt, eggs, flour and skimmed milk to a thin batter, bake 4 narrow omelettes in a little bit of fat until done and fill them.

Tip: Always use an aromatic ham, it will give a wonderful touch to your dish!
