How#s it done:

1. preheat the oven to 150 °C. Lightly oil a 22 centimeter diameter baking dish.

2. cut off olives. Whisk eggs in a baking bowl with cayenne pepper, pepper, salt, parsley, olives and shredded tuna. Remove seeds from peppers and cut into thin strips. Cut spring onions into fine rings.

Heat oil in a non-stick frying pan and sauté the spring onion rings. Add the peppers and 1 minute later the capers and mix well. Pour the egg mixture over the top and stir-fry for 2 min over high heat until the omelet begins to set.

Transfer to the baking dish and bake in the oven for 15 to 18 min until golden brown. Serve hot, lukewarm or cooled and cut into pieces.
