Mix eggs and salt together. Heat a little oil in a large frying pan and make an omelet with half of the beaten eggs. Set aside and cut into 4 pieces. Bake a second omelet. Heat the remaining oil and lightly brown the potato pieces. Set aside. Sauté the onion mixture for 2-3 minutes.

Then add turmeric, chili and salt and stir everything together well. Add the water and let it boil. Add the potatoes. Put the lid on and reduce the temperature. Cook gently for 10 minutes, then place the omelettes in the pot and cover again. Gently cook until the potatoes are soft. About 10 min.
