Toast the nuts separately in a dry, coated frying pan until light. Stir constantly so that the nuts do not burn. Then cool and remove the thin skins of the nut kernels. This can be done easily with your hands or by rubbing the nuts together in a dish.

Line a rectangular baking pan with parchment paper.

In a saucepan with a thick bottom that conducts heat well, heat the sugar gently over low heat until it is completely dissolved. Make the sugar until it has turned a light yellow color. Add the nuts, toss briefly in the sugar without burning, and pour the brittle mixture into the mold. Spread quickly with a spoon until smooth.

Cool and dry the brittle, then break into pieces and keep in a tightly sealed tin. Depending on your needs, you can grind the brittle for baking in a blitz grinder or finely chop it with a pasta walker. Beautifully packaged, it makes a good gift.
