Instructions:

A great noodle dish for any occasion:

Place the glass noodles in a large enough bowl, cover with boiling hot water and soak for 15 minutes.

Drain the noodles thoroughly and shorten to a manageable length with kitchen shears.

Heat the oil in a wok or frying pan and sauté the leek and garlic for 30 seconds.

Add the chicken mince to the wok form and fry for 4-5 mins until fully cooked.

Add the chicken soup, chili sauce, yellow bean paste and soy sauce to the wok form and cook for 3-4 min until done.

Add the drained noodles and sesame oil to the wok form, toss well and cook for 4-5 min.

Pour into warmed serving bowls, sprinkle with finely chopped chives and bring to table on the spot.
