Beat the eggs with sweet cream, sugar, lemon zest, lemon balm and a pinch of salt and pour over the sliced white bread. Add the raisins and mix everything together. Allow the mixture to stand for a while and then wrap it in a cloth in the form of a strudel. Tie two ends of the cloth so that you can put a spoon through it. Put the “Nackaten Bua” in a pot with plenty of hot water, cover with a lid and cook in steam for about 1 hour. (This procedure is not necessary in a convection oven.) Cut into slices, arrange and serve with the prepared must foam. For the must foam, whisk the egg with yolks and sugar in a bowl until foamy, but do not beat. Then put in a warm water bath and pour the must in a thin stream and beat in.
