For the cream of mushroom soup heat butter and in it cut mushrooms into slices, sprinkle with the juice of the lemon and let them steam. Prepare a light roux from butter and flour, pour in beef broth and white wine and add the steamed mushrooms. Add a mixture of egg yolk and whipped cream to the soup. Season the cream of mushroom soup with salt, pepper, nutmeg and serve sprinkled with chopped chives.
