For the meringue nest with strawberries cranberry cream beat egg whites with the sticks of a hand mixer until stiff. Mix sugar, 100 g powdered sugar and cornstarch, sieve and let trickle into the egg whites while stirring. Stir for about 5 minutes until the mixture forms firm peaks.

Pour the egg whites into a piping bag fitted with a star nozzle and form 8 fine meringue nests. Bake in a preheated oven at 120°C (convection oven: approx. 95°C) for 1 ½ hours. Then let cool in the oven for two hours without temperature with the door closed.

Wash and clean strawberries. Puree 150 g strawberries and cranberry jelly with a hand blender. Whip Rama Cremefine with the bars of the hand mixer and stir in the puree. Then chill the cream. Cut the remaining strawberries into fine sticks. Pour 150 ml of water into a bowl and stir in the remaining powdered sugar with a whisk. Put the strawberries in it.

To serve, place the cream in a piping bag fitted with a star attachment and fill the meringue nests with cream bubbles. Divide the strawberries among the nests, garnish with mint and serve the meringue nest with strawberries immediately.
