Skin the rabbit legs – provided that necessary – rinse them under cold running water, dry them thoroughly with kitchen paper and rub them with salt and pepper. Then coat with hot mustard.

Remove the peel from the onions and garlic cloves and chop them finely. Preheat the oven to 220 °C.

Heat the oil in a casserole. Pour in the drumsticks and sear them on all sides. Add the onions and fry briefly.

Extinguish with the white wine, add the garlic and thyme and cook with the lid closed on the middle shelf of the oven for about 50 minutes. Drain the roast stock.

Serve drumsticks with savoy cabbage and gnocchi.

Tip :

Stir the roast stock with a little bit of whipped cream, so you get a delicious sauce.
