For melon with wine cream, peel melon, cut into 8 pieces and remove seeds. Drizzle melon pieces with Maraschino and chill.

Mix strawberries and raspberries with powdered sugar and bring to a boil over low heat. Simmer for a few minutes, then pass through a sieve, add lemon juice to taste if desired, and refrigerate.

Beat egg whites with two thirds of the sugar until stiff. Mix the wine with the remaining sugar, yolks and the custard powder until smooth.

Bring to a boil over low heat, stirring constantly, and cook until the mixture thickens. Stir in the snow and let it bubble up again.

Before it begins to set, pour the cream into dessert bowls and refrigerate. Place two marinated melon pieces on top of the wine cream, pour the fruit pulp over them and sprinkle with chopped pistachios.
