Instructions:

For melon couscous, put the couscous in a bowl.

Heat oil, sauté onion and garlic and add curry for about 3 minutes. Add vegetable boullion, bring to a boil and pour over the couscous.

Leave to swell for about 20 minutes with the lid on.

Cut melons in half lengthwise, pit and pierce with a baller except for a 1 cm wide rim. Collect the juice and add to the couscous.

Heat oil in a frying pan. Cut meat into cubes and fry for about 3 minutes. Remove, season and mix into the couscous.

For the sauce, mix all the ingredients together well and add to the couscous.

Arrange the melon couscous in melon bowls and serve.
