Slice the melanzane lengthwise from the round end, but leave it together at the stem end. Soak 1000 cmin in tap water. Drain in a colander and pat dry with paper towels. Mix almond kernels, juice of one lemon and spices in a small baking bowl. Spread on cut sides of melanzane. Press melanzane together and wrap tightly with kitchen twine. Heat oil and ginger slices over moderate heat until hot.

Pour in melanzane and fry in about 8 min, turning until shiny brown. Turn down kitchen heat, cover skillet and smolder greens for 20 min, turning occasionally to the other side.

Before serving, cut out the strings and offer with cilantro greens and long-grain rice.

Tip: Always use aromatic spices to enhance your dishes!
