For the Mediterranean quiche, first prepare the quiche dough according to the basic recipe and, if necessary, wrap it in cling film and let it rest in the refrigerator for 30-60 minutes.

For the filling, peel the onion and cut into fine rings. Cut the olives into rings as well. Set aside a little at a time for decoration. Crumble the feta. Drain the dried tomatoes and cut into strips or cubes. Grate the cheese.

Preheat the oven to 200 °C. Grease a quiche dish.

Roll out the dough larger than the quiche dish and place it in the dish. Press the edges well.

Mix feta, tomatoes, sour cream, eggs, olives and onions. Season to taste with salt and pepper. Pour this filling into the mold. Sprinkle the grated cheese on top and place the set aside olives and onion rings on top. Bake the Mediterranean quiche for about 40-50 minutes.
