For the meatballs with spelt rice, first put the rice in a pot and cover with 2 cups of water. Bring to a boil and cook over medium heat until the rice is tender.

Chop the spring onion and mix it with the minced meat. Then add the chopped garlic clove, cheese, and bread crumbs and knead well. Form into small balls.

Heat a pan with oil and add the balls. Fry for five minutes. Then add 500 ml of water and dissolve the bouillon pure in it.

Then add the red wine and let it reduce for 10 minutes. Season with salt and pepper and thicken with a tablespoon of flour if necessary. Serve with the rice.
