Instructions:

Pork cooled rinse and dry. Next, cut diagonally to the grain into narrow slices, then cut them 10cm long and 3cm wide strips. Soak wooden skewers in water to prevent them from burning easily later on the broiler.

Remove the skin from the galangal and chop finely, rinse the lemongrass and cut into thin slices. Crush both together with coriander seeds and cumin seeds in a mortar. Stir in salt, pepper, one tbsp sugar, curry powder and three tbsp of the thick layer on top of the coconut milk as well. Then season pork with this mixture.

Marinate pork with lid closed in refrigerator for at least one hour. Then stick lengthwise in a concertina fashion on the soaked skewers.

For the lettuce, remove the skin from the cucumber or rinse thoroughly if necessary, quarter lengthwise and cut into very thin slices. Remove the skin from the shallots and also cut into very thin slices. Rinse the peppers, remove the stalks, seeds and cut into thin rings. Now rinse your hands thoroughly.

For the sauce, make an eighth of a liter of water with vinegar, the remaining sugar and a pinch of salt for about a minute and then cool.

Just before serving, mix the cucumber mixture with cooled sauce and season with vinegar and sugar sweet and sour.
