Meat Pancakes

Instructions:

Mix eggs, milk, flour, melted butter and a pinch of salt into a not too thin pancake batter.

Heat a little oil in a frying pan, pour in a little batter and fry the pancakes until golden brown, swirling the pan briefly.

Turn and bake on the second side until golden. Lift out and bake remaining batter into pancakes as well. Keep warm stacked on top of each other in aluminum foil.

For the filling, finely chop shallots and sauté in a little oil until light. Finely chop the garlic, add it as well and now mix in the minced meat. Break up well with a wooden spoon and fry well, stirring repeatedly. Add parsley, season with salt, pepper and nutmeg or marjoram.

Let liquid boil down completely or pour off. Then stir in crème fraîche and let the mixture boil down until nice and creamy. Season again if necessary. (At the end the mass must be well spreadable).

Place pancakes on top, spread with a little meat mixture and roll up again or fold into triangles.

If you like it even more substantial, you can melt butter for the garnish, sprinkle the meat pancakes with chopped parsley and drizzle with the brown butter.
