For the pear cream, peel the pears and divide them into pieces. Steam until soft with a dash of juice of one lemon and sugar and mash finely. Season with banana syrup and pear brandy.

Mix crème fraîche with whipped cream until smooth and season with salt and pepper.

Make beans in salted water, quench in cold salted water. Wrap the beans in portions with the bacon and fry briefly in a frying pan before serving.

Fry the diced bacon – for the bacon dip – in a frying pan.

Dressing: Roll up matjes fillets and fill with crème fraîche. Pears cream over matjes rolls form and decorate with walnut kernels. Cut a pear into fine slices and place decoratively around the matje rolls. Put bean bundles and the hot bacon dip on the plate. If you like, you can add a little bit of savory.

Serve with boiled, peeled potatoes and a freshly tapped beer.
