Rinse and dry the matie. Spread bread with butter, place matie on top. Remove peel from avocado, cut into slices and sprinkle with half of the juice of one lemon. Core the apple, cut into fine cubes and mix with the remaining juice of one lemon. Clean and dice the young onion. Mix yogurt with lemon zest, salt and pepper. Layer yogurt sauce, apple, avocado slices and spring onion cubes over the matjes form. Cut the onion into fine rings and spread evenly over the top.

Tip: The higher the fat content of the yogurt, the more aromatic and creamy the result!
