1. ) Rinse the potatoes and cook in their skins in a little salted water – only the bottom layer of potatoes must be in the water, the tops cook in steam.
2) Drain the potatoes, peel while still hot and press through a potato press.
3. ) In a saucepan heat milk and then pour over the potato snow.
4. ) With a whisk, heartily mix the potato mixture, adding fat. Season with nutmeg and iodized salt.
5. ) Variations: Part of the potatoes can be replaced by steamed vegetables, for example pumpkin, creamed spinach, broccoli or possibly carrots.
