Marzipan Roast Apple with Vanilla Wine Foam

Instructions:

Remove the core from the apples.

Stir the marzipan well with the chopped walnut kernels. Cut the apricots into fine cubes and add them with Calvados and cinnamon to the marzipan mixture. Mix everything well and fill into the cut out apples.

Put the cinnamon, butter, sugar and apple juice in a frying pan and place the filled apples in it. Put them into the preheated oven at 200( C. Pour the juice from the roasting pan over the apples several times. After 25 minutes, remove the roasting pan and let everything cool slightly together.

Place the apples on the center of the plates and cover with the vanilla wine foam. Sprinkle with powdered sugar and garnish decoratively with fresh mint.

Vanilla wine foam:

Boil the white wine once with the scraped vanilla pod and the vanilla pulp.

Then drain and beat with egg yolks and sugar over a hot water bath until creamy. Remove from the water bath, continue beating briefly and bring to the table.
