For the Maronikipferln first prepare the shortcrust pastry. Cut the butter into small pieces and crumble with flour. Quickly knead with the remaining ingredients to a smooth dough and let rest in the refrigerator for about 1 hour.

Mix the chestnut puree, vanilla sugar and rum well.Roll out the shortcrust pastry evenly and not too thinly on a floured work surface. Cut triangles with a knife or a pastry wheel. Spread a little jam in the center of the dough triangle and then put the chestnut filling with the help of a spoon.

Roll dough triangles from the wide side to the tip and form a croissant. Place these on a baking tray lined with baking paper.

Whisk the egg yolk and milk well and brush the finished croissants with it. Bake the maroni croissants in the preheated oven at 190° C for about 15 minutes.
