For the mousse au marones à la Feinspitz, beat the egg yolks with half the sugar and the vanilla sugar until foamy, then whip the egg whites with the remaining sugar until creamy. Whip the whipped cream as well and refrigerate.

Melt the chocolate over a water bath. Mix the chocolate and the chestnut puree with the yolk cream and season with a dash of Amaretto or Baileys. Carefully fold in the snow and the whipped cream alternately.

Either fill into ramekins or glasses or refrigerate in a large bowl for at least 4-5 hours – preferably overnight. Serve the mousse au marones à la Feinspitz with fruit of your choice (raspberries, mango, peaches, etc.) or homemade chocolate sauce.
