Marinated Chicken Skewers on Caramelized Pineapple Cubes

Cut the chicken breast into 3 cm cubes. Mix soy sauce with chili sauce, about 2 tablespoons of water, cornstarch and a pinch of sugar. Place the meat in the marinade and season with salt and pepper. Allow to marinate briefly, turning the meat at the same time. Meanwhile, peel and finely chop the ginger and finely slice the green onion. Drain the pineapple cubes and pat dry with kitchen paper. Heat some peanut oil in a wok pan. Add the pineapple cubes and sauté. Mix in the chopped green onion, sprinkle in the brown sugar and ginger and sweat for a minute. Remove from heat and stir in the chili sauce. Put the marinated chicken on 2 skewers. Heat some peanut oil in a pan and fry the skewers all around for 3-4 minutes. Keep brushing with the marinade. Arrange the fried pineapple cubes on warmed plates and place the chicken skewers on top.
