Instructions:

For the pickled char with gin and cucumber salad, remove the skin from the fish fillets.

For the marinade, mix all the ingredients and empty over the fish fillets, let stand for about 45 minutes.

Mix the sour cream with the olive oil, some salt and pepper. Peel the cucumbers and cut them lengthwise into thin strips with a peeler down to the core. Mix with the chopped chili pepper and mint, season with salt, pepper, vinegar and oil just before serving.

Fry (grill) the slices of brown bread in a pan or on the grill until crispy on both sides. Spread the sour cream on the bread, place the fish cut into small pieces on top and garnish with the cucumbers.

Serve the pickled char with gin and cucumber salad.
