For the marble muffins, combine flour, baking powder, sugar and salt in a baking bowl. Stir in buttermilk, crème fraîche, egg and orange zest until well blended. Stir in chocolate cubes as well, pour batter into ramekins.

Melt the chocolate and whipped cream in a not too hot water bath. Pour 1 tsp of it into the center of each muffin. Using a small spoon, gently fold into the batter, making circular incisions at the same time. This will create the marbling.

Bake in the lower half of the oven for about 20 minutes at 200 °C (convection oven: 180 °C). Remove and let the marble muffins cool on a rack.
