For the fruity mango tofu curry, cut the tofu into small cubes and fry a little in a pan (preferably wok).

In the meantime, also dice the mango (peeled), the onion and the tomatoes. Remove the fried tofu from the pan and fry the onion cubes in the oil residue, adding the garlic.

Then add the diced tomatoes and spices (salt, pepper, cumin, curry, bouillon cubes, ketchup, sugar).

After about 1-2 minutes, pour in the coconut milk and add the mango pieces and the tofu cubes and stir well. Let the mango tofu curry cook for a few minutes and season if necessary.
