A simple but delicious cake recipe:

Remove the skin from the mango, remove the pulp from the core and crush. Stir in curd cheese, sugar and vanilla sugar. Whip the cream until stiff. Soak gelatine leaves in water, squeeze out and melt in a bain-marie and mix into the mixture. Gently fold in whipped cream.

Pour into a shallow dish and set in the refrigerator for 1 hour.

Heat sugar in a non-stick frying pan to caramel, roll walnuts in it and cool on a cooling rack.

Use a spoon to make dumplings from the mango mousse, arrange on a plate with walnut ice cream and nuts and decorate with the lemon balm.
