Instructions:

Strain the mangoes. Set aside a few slices for garnish. Blend the rest with the juice of one lemon and rose water using a hand blender. Whip the cream until stiff and gently fold in the almond kernels. Fill into serving glasses and leave to cool for half an hour.

To serve, cut the remaining mango slices into small fans and place on the cream, garnish with mint leaves.
