For the puff pastry, preheat the oven to 200 °C convection oven. Line a baking rack with baking paper. Grate the orange or lemon peel.

Beat the egg well in a small bowl. Roll up the puff pastry, brush with egg and sprinkle with the orange or lemon zest and a tablespoon of sugar.

Fold once and roll over it a few times with a rolling pin until the two pieces stick together.

Using a pasta wheel, first cut in half crosswise and then wheel lengthwise into 2 cm wide strips.

Twist each strip twice around the long axis and place on the baking paper. Brush with egg and sprinkle with the remaining sugar.

Bake the puff pastry in the oven for 10 minutes until brown.
