For the Madeira bakery, make a shortcrust pastry from the ingredients and let it rest for half an hour.

Roll out the dough to the thickness of the back of a knife and cut out round cookies. Place them on an ungreased baking tray and bake at 200° C for about 8 minutes.

For the filling, bring water, sugar, vanilla sugar and lemon zest to the boil and allow to swell. Then add the nuts. Add rum and cinnamon to taste.

Assemble the cookies with the filling and sprinkle the edges with coconut oil. Spread the top of the Madeira biscuits with hot jam and serve.
