To make the macadamia vanilla cookies, first cut the cold butter into small cubes and place in a large bowl. Leave it at room temperature for about half an hour to soften.

Then cream the butter together with the sugar as well as the egg.

Slit the vanilla bean lengthwise. Scrape the vanilla pulp out of the pod with the blunt side of a knife and add to the butter mixture. Stir again briefly.

Combine the baking powder with the flour, add this flour mixture to the butter and quickly incorporate with a mixer until a smooth dough is formed. Finally, add the macadamia nuts. Cover the finished dough and let it set in the refrigerator for about 1 hour.

Preheat the oven to 160 °C. Line the baking tray with parchment paper. Using a teaspoon, take about enough of the dough to fill the teaspoon about 2 cm high. Carefully place this mound on the baking sheet. Leave 3 cm of space between each ball of dough.

Bake the macadamia vanilla cookies for 20 minutes, when they will be semi-rounded and golden brown. Next, remove from baking sheet and let cool on a cooling rack.
