PREPARATION Preheat the oven to 250 °C (top heat). PREPARATION For the gratin, beat the egg yolks with the powdered sugar until foamy. Add lime juice, amaretto and sparkling wine and continue beating. Finally fold in the whipped cream. Place the halved lychees in an ovenproof dish or soup plate and cover with the gratin mixture. Sprinkle with the brittle and gratinate in the preheated oven at high top heat until golden brown. Before serving, sprinkle with sliced lime peel.
