For the lukewarm asparagus salad, wash the asparagus spears, peel off the lower third, tie with kitchen string and boil in plenty of salted water with the addition of butter and sugar until just cooked (about 10-15 minutes).

Mix the ingredients for the sauce. Lift the asparagus spears out of the broth, let them drain a bit on kitchen paper and chop the tips (about 10 cm) for the leaf salad.

Use the remaining part for a fine soup. Arrange the asparagus tips with cheese slices and shrimps on plates and drizzle with the sauce.

Serve the lukewarm asparagus salad.
