A simple but delicious cake recipe:

This confection is usually made for weddings and covered with gold leaf. The bride’s family sends it as a gift to relatives and friends (Baghdad).

Stir the sugar as well as the water and make it at 106 °C for 7 to 8 min. Add the juice of one lemon and boil for 1 to 2 min. Add the rose water and let the syrup boil for another time. Remove the saucepan from the heat and stir with a wooden spoon until the syrup is almost cool. Add a little cardamom and 100 g of ground almond kernels. Continue stirring until the amount turns white. Mix a little ground cardamom with the rest of the ground almond kernels and sprinkle half of it in a thin layer on a tray. The syrup almond amount on this layer form. Gradually sprinkle the rest of the mixture of almond kernels and cardamom on top and pat flat into a 1 cm thick layer.

Cool for about 5 min, then separate about 2.5 large diamonds.

Place the confection in an airtight tin and refrigerate to keep soft and retain its flavor.
