For the love letter pie, first prepare a shortcrust pastry according to the basic recipe. Let the dough rest in the refrigerator for at least 2 hours.

Preheat the oven to 170 °C and line a baking tray with baking paper. Beat the egg with a fork and set aside.

Roll out the shortcrust pastry thinly on floured work surface. Using a sharp knife, cut out two diamond-shaped pieces. (To get especially accurate and symmetrically shaped pieces, use a paper template if necessary). Cut out 4 hearts, each different in size, from the remaining dough.

Place a blob of jam in the center of each dough diamond and spread it lightly toward the top (so that later it looks like jam is in the envelope). Now fold the letters together: To do this, fold each of the right and left tips inward, over the blob of jam, and press lightly. Place the bottom tip on top and press down lightly as well. Finally, press two hearts of different sizes on top of each other in the middle of the folded tips.

Brush the finished “little letters” with egg, sprinkle with granulated sugar and carefully place on the prepared baking sheet. Bake in preheated oven for 10-15 minutes until golden brown.
